Recipe: Lemon Rosemary Garlic Chicken and Potatoes

I love a classic, easy bake rosemary garlic chicken with potatoes. It is an incredibly satisfying meal and a cinch to make! Just think about the copious amounts of chicken fat the potatoes will be roasting in. Mmmmmm….

I’m telling you these baked chicken breasts really are so good. Baked chicken get’s a pretty bad wrap, as most of the time it is pretty tasteless and dry…Which led me to work on a recipe that would keep the quick and easy approach to baked chicken, while spicing up the flavor, and keeping it super tender! The next time you have some chicken breasts in the fridge, i’m telling you, you have to try this recipe! Your family will be thanking you for an awesome tasting meal, and you will be happy you didn’t spend all day in the kitchen!

You can also switch up the seasonings and add a spicy mix and toss in oranges and limes instead of lemons. Swap cilantro for the rosemary. Serve it over rice, maybe? No need to be a recipe robot – get creative!

Serves 4 to 6 | Prep 15 minutes | Cook time 1 hour

Ingredients


  • grilled-rosemary-chicken-lemon6 chicken legs (about 1 1/2 lb.) (or choose your favorite bird parts)
  • 4 skin-on, bone-in chicken thighs (about 2 1/2 lb.)
  • 2 pounds small red potatoes
  • 2 whole heads of garlic
  • 1/3 cup + 3 Tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 2 lemons, sliced
  • 3 tablespoons fresh rosemary leaves
  • 2 teaspoons sea salt
  • 1 teaspoon freshly ground black pepper
  • Fresh minced parsley

Instructions


Step 1

Make your lemon/garlic mixture. Stir together 10 mashed garlic cloves, 1/3 cup olive oil, lemon juice, rosemary, salt and pepper in a medium bowl. Marinate the chicken for a couple of hours. If you don’t have time to marinate, simply coat your chicken with this lemon mixture.  Set aside the remaining mixture.

Step 2

Preheat oven to 450°.

Step 3

Place a roasting pan on the stove top over 2 burners. Add 3 Tablespoons olive oil, and heat over medium-high heat. Sprinkle chicken with salt and pepper. Place, skin sides down in pan. Add potatoes. Cook 9 to 10 minutes or until chicken is browned.

Step 4

Turn chicken, and pour lemon/garlic mixture over chicken. Add the remaining garlic cloves to the pan along with your lemon slices. We want them to roast!

Step 5

Bake at 450° for 45 to 50 minutes or until chicken is done. Add fresh parsley for garnish and serve.
